Abstract

An object is to provide a method of manufacturing a beverage packed in a container, which method can suppress time degradation, such as the taste, flavor and appearance quality degradation, of the drink liquid due to heat applied during the manufacturing steps or due to dissolved oxygen in the drink liquid, provides excellent taste/flavor balance, can reduce the energy cost required during the manufacturing, and is environment-friendly. Such a method of manufacturing comprises: a primary heating/oxygen-removing step of mixing one or more types of raw material liquids each containing the extract from the plant body with water of a higher temperature than that of the raw material liquids thereby to heat the raw material liquids and adjusting an amount of dissolved oxygen in the mixed liquid of the raw material liquids and the water; and a secondary heating/sterilizing step of, after the primary heating/oxygen-removing step, heating the mixed liquid to a sterilization temperature and holding the mixed liquid at the sterilization temperature for a certain period of time, wherein the primary heating/oxygen-removing step includes adjusting the amount of dissolved oxygen in the mixed liquid to fall within a range of 0.1 ppm to 3.0 ppm.
