Abstract

AN AQUEOUS ACID SOLUTION IS ADDED TO PLANT BODIES CONTAINING PROTEIN CURCULIN TO THEREBY ADJUST THE PH OF THE RESULTING MIXTURE TO 3 OR BELOW AND THEN THE PROTEIN CURCULIN IS EXTRACTED. ALTERNATELY, AN AQUEOUS ACID SOLUTION IS ADDED TO PLANT BODIES CONTAINING PROTEIN CURCULIN AND THE RESULTING MIXTURE (1) IS TREATED UNDER SUCH CONDITIONS AS TO GIVE A pH VALUE OF 1.8 TO 4.0, FOLLOWED BY THE EXTRACTION OF THE PROTEIN CURCULIN FROM THE TREATED MIXTURE (2).
