Abstract
El metodo para la obtencion de aceite extra virgen de la pulpa de aguacate, comprende el desarrollo de una tecnologia para la obtencion de aceite de alta calidad, sin el empleo de disolventes y/o de reactivos quimicos, que evita la produccion de aguas residuales con alta demanda de oxigeno, optimiza el gasto de energia. Ademas de ser un aceite con un alto contenido de vitamina E, fitoesteroles, luteina y clorofilas. El cual es obtenido de la pulpa de aguacate, sometiendo esta a un calentamiento por microondas, seguido de un proceso de expresion, almacenamiento en refrigeracion y centrifugacion. Tambien es relevante senalar que la utilizacion de la pasta residual obtenida en esta tecnologia despues de la extraccion del aceite extra virgen, por su bajo contenido en humedad, no requiere refrigeracion, es estable el color y puede emplearse como base para la preparacion de dips, aderezos, salsas, cremas, etc. Otro punto importante es que no hay contacto con el aceite de la semilla y con compuestos de la cascara que puedan contaminar el aceite extra virgen extraido de la pulpa. Los indices de peroxidos, acidez y contenido de acidos grasos trans se encuentran dentro de las normas internacionales para aceites comestibles.
