Abstract

Se describe un metodo y sistema para procesar fruta citrica. Una camara de pelado (10) tiene extremos opuestos (160, 163) y una entrada de fruta (18) y una salida de fruta (20) formada en los extremos opuestos respectivos. Rodillos abrasivos (50) se montan giratoriamente en configuracion arqueada dentro de la camara de pelado en un area que forma una porcion inferior (22) de la camara de pelado. La fruta citrica se alimenta en la camara de pelado a traves de la entrada de fruta hacia la salida de fruta. La fruta citrica se atora en los rodillos abrasivos que giran con un tiempo de residencia dentro de la camara de pelado para pelar la superficie externa de la fruta en una cantidad suficiente para remover la mayoria del aceite dentro de la fruta citrica y dejar suficiente grosor de cascara para mantener la integridad de la cascara.
