Abstract
La invencion se refiere a un procedimiento para la produccion de fermentos alimenticios que comprende na fermentacion de bacterias lacticas en un medio de cultivo que comprende al menos un sacarido activador de fermentacion elegido del grupo consitituido por las maltodextrinas, maltodextrinas ramificadas, almidones solubles, oligosacaridos solos o en mezcla.
