Abstract

Se describe un método para preparar un almidón inhibido, en el que el mismo comprende las etapas de a) proporcionar una suspensión que contiene un almidón granular nativo obtenido de un almidón que contiene materia prima, b) alcalinizar la suspensión agregando amoniaco o agregando uno o más compuestos que tengan la capacidad de liberar o producir amoníaco en la suspensión, c) ajustar el pH de la suspensión a un valor entre 7 y 10, d) agregar al menos un oxidante que sea una fuente de cloro activo a la suspensión para una reacción con dicho amoníaco, e) agregar al menos un ácido orgánico o un bisulfito a la suspensión con el fin de eliminar cualquier oxidante residual, mal sabor y olor no deseado, y f) agregar al menos un antioxidante a la suspensión con el fin de estabilizar la inhibición obtenida del almidón durante el almacenamiento prolongado en bodega, así como un almidón que tiene una viscosidad incrementada cuando se cuece en agua dura en comparación con cuando se cuece en agua destilada, un almidón inhibido preparado con el método de acuerdo con la presente invención, el uso de dicho almidón inhibido en un producto alimenticio y un producto alimenticio que contiene dicho almidón inhibido.
