Abstract
La presente invención se refiere a un procedimiento para hacer una composición bombeable que tiene al menos 50% de sólidos, dicho procedimiento caracterizado porque comprende: (a) calentar un consomé de partida derivado de una fuente animal a una temperatura de entre 50°C y 70°C; (b) agregar al consomé de partida al menos una enzima antigelificante para formar una mezcla que comprende el consomé de partida y la al menos una enzima en donde la grasa se remueve de dicho consomé antes del paso (b), (c) incubar dicha mezcla del paso (b) mientras e mantiene dicha mezcla a una temperatura de entre 50°C y 70°C; y (de) concentrar la mezcla del paso (c) después de la incubación para obtener dicha composición bombeable, en donde dicha composición tiene al menos 50% de sólidos.
