Abstract
La presente invención se refiere a un proceso para preparar un producto lácteo fermentado, que comprende las siguientes etapas: a) hidrólisis de lactosa contenida en la lecha; b) concentraciones de proteínas y azúcares mediante un proceso de filtración de la composición resultante bajo presión elevada; en donde una etapa de fermentación de leche se realiza durante la etapa a) o después de la etapa a) o después de la etapa b). La invención también se refiere a un producto lácteo fermentado obtenible de acuerdo con el proceso de la invención.
