Abstract
La presente invención se refiere a una emulsión de agua en aceite que comprende 50 a 85% en peso de una fase acuosa y 15 a 50% en peso de una fase grasa, en donde la fase grasa comprende triglicéridos HOH en una cantidad de 8 a 50% del peso total de la fase grasa, y triglicéridos HHH en una cantidad de 1 a 6% del peso total de la fase grasa, en donde por lo menos 25% de los triglicéridos HHH contienen por lo menos dos residuos de ácido graso diferentes, en donde "H" significa un residuo de ácido graso saturado con 16 a 24 átomos de carbono y "O", un residuo de ácido oleico. La invención se relaciona adicionalmente con un proceso para la preparación de una emulsión de agua en aceite comestible de acuerdo con la invención. La invención también se relaciona con el uso de triglicérido HHH graso para promover la inversión de una emulsión aceite en agua que comprende 15 a 50% en peso de una fase grasa, dentro de una emulsión de agua en aceite, en donde la fase grasa comprende triglicéridos HOH.
