Abstract
La presente invención se refiere a un producto alimentico de leche caracterizado porque comprende un componente líquido que consiste de un producto lácteo; al menos una cepa de microogranismos; una composición de grano entero hidrolizado; y una alfa-amilasa o fragmento de la misma, que la alfa-amilasa o fragmento de la misma no muestra actividad hidrolítica hacia fibras dietarias cuando está en estado activo, donde la composición de grano entero hidrolizado tiene una estructura de beta-glucano sustancialmente intacta en relación con el material de partida y tiene una estructura de arabinoxilano sustancialmente intacta en relación con el material de partida, donde la "estructura sustancialmente intacta" significa que la estructura es al menos 95% intacta en relación con el material de partida cuando es determinado por la cromatografía de exclusión de tamaño (SEC) de perfil de peso molecular donde el producto alimenticio de leche es un producto de leche fermentado o un producto de leche no fermentado.
