Abstract
La presente invención se refiere a un procedimiento para la preparación de una fracción soluble de proteínas de soya, en el cual se extrae una harina de soya desengrasada conteniendo por lo menos 50 por ciento de proteínas por una solución acuosa de ácido con un pH comprendido entre 1.5 y 3.5 y a una temperatura inferior a 50°C. se separan los insolubles por centrifugación y se obtiene así un extracto ácido de proteínas de soya, caracterizado porque se neutraliza el extracto ácido a una temperatura inferior a 50°C en un tiempo inferior a 60 segundos por la adición de un álcali de concentración por lo menos de 0.1 N.
