Abstract
La presente invención se refiere a un procedimiento para la preparación de una pectina pobre en metoxilo muy reactiva al calcio, y a una pectina pobre en metoxilo muy reactiva al calcio obtenible mediante dicho procedimiento. Además, la presente invención se refiere al uso de la pectina pobre en metoxilo de acuerdo con la invención para la producción de productos alimentarios y no alimentarios. Adicionalmente, es un objeto de la presente invención proporcionar un producto o un sistema acuoso estabilizado preparado utilizando la pectina pobre en metoxilo de acuerdo con la invención.
