Abstract

Se proporciona una composición sólida que no es muy dura y de excelente comestibilidad y a la que se le imparten una textura crujiente seca y buena y un sabor favorable derivado de la materia prima independientemente del alto contenido de fibra dietética insoluble; una composición sólida que comprende un polvo de una parte comestible y/o un sitio localizado de fibra dietética insoluble de uno o más seleccionados del grupo que consiste en vegetales secos, granos secos, legumbres secas, y frutos secos, en donde: (1) la composición sólida contiene 3% en masa o más de proteína; (2) la composición sólida contiene 3% en masa o más de fibra dietética insoluble; (3) un contenido de humedad en base húmeda de 11% en masa o menos; (4) una tasa de secado (105°C, 5 minutos) de 0.02 g/s×m2 o más; y (5) un 50% de diámetro integrado de partículas en una dispersión acuosa de la composición sólida después de la ultrasonicación de más de 5 µm y 600 µm o menos.
