Abstract

La presente invención se refiere a un proceso para la fabricación de una suspensión de partículas de salvado de mostaza que comprende las siguientes etapas: a) proporcionar una dispersión acuosa de partículas de salvado de mostaza que provienen de las semillas de mostaza negra (Brassica nigra) y/o de las semillas de mostaza de la India (Brassica juncea), dichas partículas de salvado de mostaza tienen un diámetro medio de volumen ponderado mayor a 300 µm; b) producir una suspensión molida de partículas de salvado de mostaza haciendo pasar la dispersión una o más veces a través de un dispositivo de alto cizallamiento seleccionado entre un homogeneizador de alta presión y un molino de fricción ultra fino, dicho homogeneizador de alta presión es operado a una caída de presión de al menos 10 MPa (100 bar). El tratamiento de estos tipos de salvado de mostaza en un dispositivo de alto cizallamiento aumenta la bioaccesibilidad general de las proteínas contenidas en el salvado. Esto es conveniente en vista del alto valor nutritivo de estas proteínas. La invención también proporciona un producto alimenticio que comprende una fase acuosa, en donde dicha fase acuosa comprende de 0.5 % a 15 % en peso de partículas de salvado de mostaza que provienen de las semillas de mostaza negra y/o de las semillas de mostaza de la India, dichas partículas de salvado de mostaza tienen un diámetro medio de volumen ponderado menor a 600 µm.
