Abstract

1286370 Mustard flavouring UNILEVER Ltd 26 May 1971 [26 May 1970] 25100/70 Heading A2B [Also in Division C5] Mustard expeller cake is maintained, in subdivided form, in the presence of water under conditions such as to bring about enzymatic hydrolysis of mustard flavour precursor present in the cake, and the flavouring thus generated is extracted into a water immiscible phase of edible oil, which may be mustard oil. The enzyme may be that already present in the cake, or it may be derived from mustard seed. In one form of the invention, oil is expelled from mustard seed in the presence of the enzymatically hydrolysed cake.
