Abstract

La presente invención se refiere a un polvo de proteína a base del bagazo de cerveza y métodos relacionados para uso produciendo productos alimenticios mejorados con proteína. Los polvos de proteína a base del bagazo de cerveza tienen propiedades benéficas que incluyen bajo contenido de ácido fítico, alto valor de PDCAAS y retención de propiedades antioxidantes significantes. Los polvos de proteína a base del bagazo de cerveza son altamente solubles y de este modo son fácilmente humectables, fácilmente dispersables y mezclables en concentraciones de hasta 50% en peso. El polvo de proteína a base del bagazo de cerveza posee características sensoriales benéficas que incluyen color ligero y sabor suave que permiten al polvo de proteína a base del bagazo de cerveza ser usado solo o como un potenciador de valor proteínico dentro de alimentos propuestos para consumo humano, alimentos para mascotas de compañía y en piensos para ganando comercial.
