Abstract

The present disclosure is related to a machine and a process for grain malting, composed of a series of structural elements to obtain the malting applied to a cereal. The machine is specially designed to perform the whole grain malting process, from the soaking, germination and drying operations, leaving the product ready for roasting; fundamental operations in the whole malting process. At the same time, manages to guarantee the quality, safety and control of the malting process, so that the entire process is advantageously performed in a single machine. The malting process to make the cereal grain germinate consists of three stages: soaking, germination and drying. During soaking, water is added to the grains, activating the enzymes, and enough oxygen is administered and the generated CO2 is removed. Afterwards, barley grains have reached a moisture content of 40-45%. At this point, barley is removed from soaking water and germination begins. Finally, the drying stage begins where hot dry air is administered to reduce moisture content and stop germination to form aroma, flavor and color components.
