Abstract
La invención está dirigida a un proceso para preparar un producto de jugo partir de una alimentación de jugo crudo que comprende microorganismos al someterla la alimentación de jugo crudo a una microfiltración para obtener el producto de jugo y un producto de jugo de retentato, en donde la microfiltración se realiza como una filtración de flujo transversal sobre un tamiz, cuyo tamiz tiene aberturas son más pequeñas que las dimensiones de los microorganismos presentes en la alimentación de jugo crudo y en donde sobre el tamiz se aplica una pulsación de retroceso de alta frecuencia.
