Abstract

a presente invenção refere-se a um processo para o prepa-ro de um produto de suco a partir de uma alimentação de suco em bru-to compreendendo micro-organismos, submetendo a alimentação de suco em bruto à microfiltração para se obter o produto de suco e um produto de suco retentado, em que a microfiltração é realizada como uma filtração tangencial sobre uma peneira que tem aberturas que são menores do que as dimensões dos micro-organismos presentes na alimentação de suco em bruto e em que através da peneira é aplicada uma pulsação de retorno de elevada frequência.
