Abstract

Se describe un método para producir una producción de carne desgrasada que comprende los pasos de: calentar tejido de carne grasa molida a una temperatura por debajo de la temperatura de coagulación del tejido de carne grasa, agregando agua o vapor al tejido de carne grasa, separando el tejido de carne grasa en una porción que contiene grasa licuada y una porción de carne desgrasada, recuperando una fase acuosa de la porción que contiene grasa licuada y agregando al fase acuosa a la porción de carne desgrasada, en donde la fase acuosa se concentra por remoción de agua antes de la adición de la porción de carne desgrasada. El método incrementa la funcionalidad del producto de carne desgrasada e incorpora proteínas esenciales y sabores en el producto final de carne desgrasada.
