Abstract

Se divulga un método para hacer leche basada en nuez, no láctea. El método incluye mezclar agua y mantequilla de nuez. Se adiciona una mezcla seca que incluye uno o más hidrocoloides seleccionados del grupo que consiste de: goma de gelano, goma de guar, goma de algarroba y goma de xantano. La mezcla seca además incluye una o más sales. La leche basada en nuez, no láctea esta sustancialmente libre de soya o ingredientes derivados de soya.
