Abstract
La presente invención se refiere a procedimiento para la producción de alchol por fermentación de contínuo de mosto dentro de fermentadores dispuestos en cascade, en el que se inyecta mosto fresco y oxigeno, de forma contínua, al comienzo de la cascada y se recoge mosto fermentado, de manera continua, al final de la cascada, caracterizado por el echo de que se utiliza una levadura floculante, se favorece el crecimiento de la levadura dentro de un primer fermentador de circulación, se impide el crecimiento de la levadura por lo menos uno de los fermentadores siguientes, se prepara la levadura del mosto fermentado al final de la citada cascada y se aparta la levadura separada.
