Abstract

La presente invención se refiere a un procedimiento para la producción de almidón y gluten a partir de trigo o un grano semejante, que consiste de someter el grano, de preferencia en forma de harina, a extracción con agua a fin de producir una fracción de almidón y una fracción de gluten, caracterizado en que el almidón 'B', como se ha definido anteriormente, se separa ya sea de la fracción de almidón o de la fracción de gluten y el almidón 'B' se pone en contacto con álcali acuoso a un pH de entre 8.5 y 12.5.
