Abstract

La presente invención se refiere a metodo para convertir almidón en un producto hidrolizado, cuyo metodo comprende contactar el almidón con una solución acuosa de alfa-amilasa en presencia de una proporción astabilizadora de un anfífilo bajo condiciones adecuadas para lograr la licuefacción del almidón.
