Abstract

La presente invención se refiere a un concentrado de jugo de naranja, caracterizado porque comprende a) sólidos de jugo en una cantidad aproximada de 55 a 75 grados Brix, preferiblemente alrededor de 60 a 70 grados Brix; b) una viscosidad aproximada de 500 a 6000 centipoisea una temperatura de 8 grados C, de preferencia aproximadamente de 2000 a 4000 centipises; c) actividad de pectinesterasa aproximada de 0.5 X 10 a la menos 4 unidades P:E: o menos por grados Brix; d) cuando menos aproximadamente 28 por ciento de valenceno retenido, de preferencia aproximadamente 28 a 55 por ciento.
