Abstract
The invention relates to the wine industry, namely to a process for producing sugar syrup intended for wine production.The process, according to the invention, provides for the acidification of the treated wine stock by treatment with cation exchange resins in H+ form by substituting cations of tartaric acid salts of wine for hydrogen cations to the attainment of the pH of at most 2.5, dilution of sugar in the acidified wine, sulphitation and storage of the produced sugar syrup.
