Abstract
The invention refers to the food industry and can be used for the production of sealed food jars.The process for producing Moldavian preserved stuffed rolls in vine leaves, according to the invention, includes the preliminary treatment of vegetables, cornmeal, which preliminarily is mixed with 5...7% of vegetable oil, are browned, blanched in boiling water in the ratio of 1:3,5, respectively, with permanent mixing, are washed under water jet with the temperature of 50...60°C up to the complete removal of the sediment and it is separated the water, cutting and frying in vegetable oil of the carrot, onion, parsley and celery roots, mixing of the enumerated components with salt, greens and black pepper, obtaining the stuffing, preparation of the vine leaves, rolling therein of the stuffing, obtaining the stuffed rolls, preparation of the filling, prepacking in jars of the rolls and of the filling, sealing and sterilization.
