Abstract
Изобретение относится к пищевой промышленности, а именно к способу получения коричневого природного красителя из ядер грецкого ореха.Способ, согласно изобретению, включает экстрагирование ядер грецкого ореха раствором, содержащим 25-30% этилового спирта и 1% безводного карбоната натрия. Экстрагирование проводится в течение 10-15 мин, при температуре 40-45°С и обработке ультразвуком частотой 37 МГц. После чего из полученного экстракта отгоняется этиловый спирт, а полученный концентрированный водный экстракт обрабатывается насыщенным раствором хлорида кальция для отделения коричневого красителя в твердом состоянии, который затем высушивается.
