Abstract

The invention relates to the alcohol industry, namely to processes for oxygenating distillates in the process of their maturation in large sealed tanks.The process for oxygenating a distillate during its maturation in a tank in the presence of oak staves, according to the invention, comprises introduction, by hydrodynamic homogenization, of gaseous oxygen into the recirculation flow of a part of the distillate until an opalescent emulsion is obtained, which is returned into the tank under the oak staves; at the same time, the oxygen is introduced in an amount of 50-100 mg/dm3, and the recirculation flow of distillate is 20-50% of its total volume.
