Abstract

The invention relates to the food industry, namely to a process for foodstuff drying into an electromagnetic field by microwave pulses.The process, according to the invention, includes treatment of foodstuffs into an electromagnetic field, using an active period with microwave pulses for heating and a passive period without phase transitions, with removal of humidity from the foodstuff surface, the treatment being carried out by period alternation, up to the attainment of the required humidity in the foodstuff, and the period duration is calculated using the formula (1) for the active period of pulses and (2) for the passive period:(1)(2)where:τA - duration of the active period of pulses, s;α - heat diffusion coefficient, m2/s;c - specific heat capacity, J/kg·K;ρ - foodstuff density, kg/m3;d - thickness of the foodstuff layer, m;TS - temperature of the foodstuff surface, K;TM - temperature of the environment, K;λ - thermal conductivity coefficient, W/m·K;Qv - intensity of released heat, W/m3;τp - duration of the passive period, s;αp - water molar diffusion coefficient, m2/s.The result consists in reducing the electric power consumption by the creation of a maximum temperature gradient in the active heating period and removing the humidity without phase transitions in the passive period.
