Abstract
Изобретение относится к винодельческой промышленности, а именно к способу производства красного сухого вина из винограда с пониженным содержанием фенольных соединений.Способ, согласно изобретению, предусматривает дробление и гребнеотделение винограда с получением мезги, настаивание-брожение с плавающей шапкой, удаление осевших семян в первые 3…5 дней от образования шапки, добавление в мезгу, на 6-ой день от образования шапки, термообработанных семян винограда сортов с черной ягодой, в пропорции 25…50% от количества оставшихся семян, после чего осуществляется настаивание-брожение мезги в течение 8…12 дней, при этом виноградные семена обрабатываются при температуре 40…45°С в течение 3…4 дней.
