Abstract

L’invention conceme une composition et une méthode pour la fragilisation des couches de nature ligno-cellulosique qui constituent la coque des fruits £1 coque en vue d’une récupération aisée et non destructive de l’amande comestible. Le procédé est caractérisé 51 ce que les couches ligno-cellulosiques sont traitées par une composition £1 base d’enzymes et 1’amande est par la suite récupérée manuellement ou par lui dépelliculage mécanique des couches traitées puis un séchage des noix dépelliculées.
