This invention relates to food industry particularly to production of "ready-to eat foods".The objective of present invention is method for preparations of chicken fillet by using Sous vide packaging. Process includes marinating in fruit and berry sauce rich in organic acids and semi-dry white wine at refrigerated temperature in individual polymeric packages - pouches or thermoformed containers, from which substantially all air should be removed giving vacuum. Then follows final thermo-sealing of the containers and packages are placed in a refrigerator for certain time from 20 to 24 hours. After marinating vacuum-packed product follows heat treatment (pasteurization) thereof according requirements of Sous vide technology.
