Abstract

복잡한 오목 및 볼록장식모양의 그위에 있는 초콜릿 성형품을 제조하는 방법은 다음 공정단계들; (a) 초콜릿 성형품의 복잡한 오목 및 볼록장식모양을 형성하기 위하여 자루형태의 탄성성형형(10)의 복잡한 오목 및 볼록장식모양부분(15)에 저점도 유동상 초콜릿재료(20)를 충전하여 저점도 유동상 초콜릿재료(20)에 필연적으로 혼입된 기포가 그 초콜릿재료를 통하여 위로 올라가도록 하여 제거하는 공정, (b) 상기 탄성성형형(10)으로 통상의 템퍼링된 유동상 초콜릿재료(21)를 충전하여 상기 초콜릿 성형품의 주 본체를 형성하는 공정과, (c) 상기 탄성성형형(10)에 충전된 상기 지점도 유동상 초콜릿재료(20)와 상기 통상의 템퍼링된 유동상 초콜릿재료(21)를 고화하여 탄성성형형(10)으로부터 초콜릿 성형품을 취출하는 공정을 포함한다.

Description

복잡한 요철 장식모양의 초콜릿 성형품 제조방법
본 내용은 요부공개 건이므로 전문내용을 수록하지 않았음
제1도는 본 발명에 따른 초콜릿 성형품을 제조하는 방법에 사용된 탄성성형형(彈性成形型) 유니트를 나타내는 사시도이고, 제2도는 제1도에 도시된 탄성성형형 유니트를 구성하는 자루형태의 단일 탄성성형형을 나타내는 제1도의 Ⅱ-Ⅱ선을 따라 취해진 횡단면도이다.

Claims (4)

  1. (a) 초콜릿 성형품의 복잡한 오목 및 볼록장식모양을 형성하기 위하여 자루형태의 탄성성형형(10)의 복잡한 오목 및 볼록장식모양부분(15)에 저점도 유동상 초콜릿재료(20)를 충전하여 저점도 유동상 초콜릿재료(20)에 필연적으로 혼입된 기포가 그 초콜릿재료를 통하여 위로 올라가도록 하여 제거하는 공정, (b) 상기 탄성성형형(10)으로 통상의 템퍼링된 유동상 초콜릿재료(21)를 충전하여 상기 초콜릿 성형품의 주 본체를 형성하는 공정과 (c) 상기 탄성성형형(10)에 충전된 상기 저점도 유동상 초콜릿재료(20)와 상기 통상의 템퍼링된 유동상 초콜릿재료(21)를 고화하여 탄성성형형(10)으로부터 초콜릿 성형품을 취출하는 공정으로 이루어지는 것을 특징으로 하는 복잡한 오목 및 볼록(요철)장식모양이 있는 초콜릿 성형품의 제조방법.
  2. 제1항에 있어서, 상기 저점도 유동상 초콜릿재료(20)가 상기 공정단계(a)에서 충전되는 상기 탄성성형형(10)이 진동수단(30,31,32)에 의하여 진동되는 것을 특징으로 하는 초콜릿 성형품의 제조방법.
  3. 제1항에 있어서, 상기 통상의 템퍼링된 유동상 초콜릿재료(21)가 상기 공정단계(b)에서 충전되는 상기 탄성성형형(10)이 진동수단(30,31,32)에 의하여 진동되는 것을 특징으로 하는 초콜릿 성형품의 제조방법.
  4. 제1항에 있어서, 상기 공정단계(a)에서 충전된 상기 저점도 유동상 초콜릿재료(20)가 5,000 내지 10,000 센티포이즈의 점도를 갖는 비-템퍼링 초콜릿재료이며, 상기 공정단계(b)에서 충전된 상기 통상의 템퍼링된 유동상 초콜릿재료(21)가 30,000 내지 60,000 센티포이즈의 점도를 갖는 것을 특징으로 하는 초콜릿 성형품의 제조방법.
