Claims (1)
- 어류를 2∼5cm로 세절된 냉동 고기풀을 85∼95도씨에서 10∼15분간 가열한 후 프로티아제를 0.1∼0.5% 투입하고 30∼60분간 교반하면서 단백질을 분해한 후 식염 5∼10%와 Dl-α-토코페롤 0.1∼0.3%를 첨가함을 특징으로 하는 페이스트상 어육 제조방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
