본문에 상술한 바와같이 단백질 함량이 높은 제품을 만들기 위하여 압착 탈수한 두부에 물이나 두유(豆乳)를 혼합하여 일부분 혹은 전부를 해교(解膠)하여 얻은 균일 용액에 알미늄 혹은 칼슘의 염과 결합하여 겔을 형성하는 물질 즉 칼복시 메틸 스타치 혹은 칼복시 메틸 셀룰로스나 알긴산 또는 알긴산 나트륨과 공지의 응고제를 첨가하여 두부의 강도와 단백질의 함량을 높이고 필요에 따라 녹말, 야채, 육류를 넣어 영양가를 높이는 것을 특징으로 하는 개량두부의 제조방법.As described above, in order to make a product having a high protein content, it is combined with a salt of aluminum or calcium in a homogeneous solution obtained by mixing water or soy milk on the compressed and dehydrated tofu to remove part or all of it.
