Description
고기 대용 제품은 주로 콩단백질과 밀단백질을 이용하여 실제 고기와 질감이나 맛에서 유사하게 만든 제품으로 현재 미국, 대만, 일본, 영국 등지에서 활발히 생산, 연구되고 있으며, 고기대용 제품의 영양을 분석해 볼 때 동물성 콜레스테롤이 없다는 점에서 많은 각광을 받는 반면, 칼슘 성분 섭취의 어려움이 많아 본 발명에서는 이를 해결하고자 한다.Meat substitute products are made from soy protein and wheat protein, which are similar in texture and taste to actual meat.
