PURPOSE: Buckwheat sprouts produced by water culture are provided which prevent geriatric diseases and improve dietary life. CONSTITUTION: The buckwheat sprouts are produced by a process comprising the steps of: maintaining a temperature of the lower part of a germination tank at 30-35°C; spreading rice straws on a base plate for backwater and laying seeds on the rice straws; spreading soil on the seeds to germinate seeds; and putting the germinated seeds into a container including an iron plate for water supply, wherein the iron plate has many holes.
