Co. ; USA)로 백혈구(WBC, White Blood Cell), 적혈구(RBC, Red Blood Cell) 및 혈소판(Platelets), 헤모글로빈(Hb, Hemoglobin)을 측정하였다. 후자는 혈청 화학검사(Serum chemistry)를 위하여 4℃에서 8시간 방치한 후 혈청분리를 위하여 2,500 rpm으로 10분간 원심분리한 후 분석시까지 초저온 냉동고(-70℃)에 보관하였다가 자동혈액분석기(Fujifilm DRI-Chem. 3500S Japan)를 이용하여 총 콜레스테롤(Kit No 1450, Fujifilm), 트리글리세라이드(Kit No 1650, Fujifilm), GOT(Glutamlc oxaloacetic transaminase, Kit No 3150, Fujifilm), GPT(Glutamlc pyruvic transamlnase, Kit No 3250, Fujifilm), 글루코오스(Kit No 1050, Fujifilm), 혈액 요소질소 BUN(Kit No 1150, Fujifilm)을 측정하였다. 또한 혈중의 콜레스테롤 분석은 트리글리세라이드(Kit No 336, Sigma), 총 콜레스테롤(Kit No 401, sigma), HDL(Kit No, 352, Sigma)은 효소적 비색법으로 정량 분석하였다. 그리고 혈중의 IgG와 IgM의 분석은 Bovine IgG ElISA Quantitation set Bethyl. 하기 표 4는 비육전기(생후 13∼19개월령) 전기간 동안의 사료섭취량과 증체량을 나타낸 것이다. 이는 비육전기의 개체별로는 다소 차이가 있지만 평균적으로 보면 개시월령과 개시체중은 거의 비슷하게 개시하였으나 종료체중은 대조구가 541.6∼545.0 kg이었고, 처리구는 537.5∼548.9 kg으로 총 증체량을 보면 C1구가 183.8 kg으로 높게 나타났다(P>0.05). 이에 따라 1일 두당 증체량은 C1구가 1.02 kg으로 가장 높았으나 처리구간에 통계적인 유의차는 없었다. 하기 표 5는 비육중기(생후 20∼23개월령)의 사료섭취량과 증체량을 나타낸 것이다. 이는 개시월령과 개시체중(541.0∼548.9 kg)은 거의 비슷하였으나 비육중기의 종료체중은 대조구가 650.0∼651.0 kg이었고, 처리구는 639.0∼664.0 kg 정도로 이 기간 동안의 총 증체량을 보면 T3구가 115.1 kg으로 다소 높은 경향을 보였으나 처리구간에 거의 차이가 없었다. 이에 따라 1일 두당 증체량은 0.84∼0.96 kg으로 처리구간에 다소 차이는 있었으나 통계적인 유의차는 없었다. 하기 표 6은 비육후기(24∼31개월령) 전기간 동안의 사료섭취량과 증체량을 나타낸 것으로 비육후기 개시체중은 비육중기의 종료체중은 639.0∼664.0 kg으로 시작하여 비육후기의 종료체중에서는 751.0∼802.3 kg으로 나타났으며, 총 증체량은 T2구가 163.3 kg으로 가장 높았던 반면에 C1구는 100.0 kg 으로 가장 낮은 증체량을 보였다. 이에 따라 1일 두당 증체량은 T2구가 0.74 kg으로 가장 높았으나 처리구간에 통계적인 유의차는 없었다.Table 6 shows the feed intake and body weight gain during the postnatal period (24 to 31 months of age). 2. 영양소 사료섭취량2. Nutrient intake

(1) 건물섭취량(DM)(1) building intake (DM)

표 7은 비육전기, 중기 및 후기때 1일 두당 섭취한 건물(DM), 조단백질(CP), 에너지(TDN)의 섭취량과 섭취율을 나타낸 것이다.Table 7 shows the intakes and intake rates of DM, CP, and TDN consumed per day during the fattening, middle, and late days.

먼저 표 7은 1일 두당 섭취한 총 건물(DM)섭취량과 섭취율을 나타낸 것으로서, 비육전기때 평균 건물섭취량은 5.98∼7.83 kg으로서 전체 처리구 중에서는 C1구가 7.83 kg으로 가장 높았던 반면에 T2구는 5.98 kg으로 가장 낮게 나타나 통계적인 유의차가 나타났다(P<0.05). 또한 비육중기에는 평균 8.08∼9.66 kg 범위로서 C2구, T2구 및 T3구가 8.31, 8.08, 8.30 kg으로 크게 낮아 실질적으로 수분함량이 높은 TMF사료를 섭취한 구가 C1구와 T1구의 9.38 kg과 9.66 kg 보다 크게 저하되어 통계적인 유의차가 인정되었다(P<0.05). 그리고 마지막 비육후기의 경우는 평균 7.86∼8.77 kg으로서 전체 처리구 중에서 C2구와 T3구가 각각 7.86 kg와 7.90 kg으로 다소 낮았으나 C1구, T1구 및 T2구가 각각 8.67 kg, 8.77 kg, 8.18 kg으로 시험개시부터 종료시까지 지속적으로 TMF 사료를 섭취하는 처리구는 크게 낮았으나 비육단계별로 다르지만 농후사료를 섭취하는 처리구는 더 높게 나타나 통계적인 유의차가 나타났다(P<0.05).Table 7 shows the total intake (DM) intake and intake per dietary allowance per day. 한편 비육단계별에 따른 건물(DM)섭취율은 보면 섭취량에 영향을 받아 유사한 경향을 나타내었다. 다시말해서 비육전기때는 농후사료를 섭취하는 C1구와 T1구의 경우에 90.4% 정도로 높게 나타났으나 C2구, T2구 및 T3구는 60.00∼61.76%로서 매우 낮게 나타났다(P<0.05). 또한 비육중기에도 전기때와 유사한 경향을 나타내었다. 그러나 비육후기에는 다시 농후사료를 섭취하는 T2구를 비롯하여 계속적으로 농후사료를 섭취해온 C1구와 T1구의 경우에 90.1% 정도로 높게 나타났으나 C2구, T3구는 60.00% 로서 매우 낮게 나타나 통계적인 유의차가 인정되었다(P<0.05). 농촌진흥청 축산과학원 한우사양표준(2007)의 거세우 육성, 비육에 필요한 영양소 요구량표에서 사육단계별 건물섭취량을 비교했을 때, 육성기(체중 250∼350kg, 일당증체량 0.8kg) 및 비육전기(체중 400∼550kg, 일당증체량 0.8kg)의 건물섭취량은 각각 5.6∼7.7kg, 8.1~8.9kg으로 본 시험의 결과(각각 평균6.49∼7.25kg, 8.95∼9.28kg)와 비슷한 수준으로 나타났으나 비육후기와 말기(체중 600∼750kg, 일당증체량 0.6kg)의 건물섭취량은 8.5∼8.9kg으로 본 시험의 관행구(8.82∼8.95kg)와 혼합구(8.72∼10.13kg)와는 비슷한 수준이였으나, TMR구(7.30∼7.58kg) 보다는 건물섭취량이 1.2∼1.32kg 더 높았다.

표 8은 1일 두당 섭취한 총 조단백질(CP)섭취량과 섭취율을 나타낸 것으로서, 비육전기때 평균 CP섭취량은 0.95∼1.74 kg으로서 전체 처리구에 중에서는 T3구가 1.74 kg으로 가장 높았던 반면에 T1구는 0.95 kg으로 가장 낮게 나타나 통계적인 유의차가 나타났다(P<0.05). 또한 비육중기에는 평균 1.16∼1.89 kg 범위로서 C2구와 T3구가 1.89 kg과 1.89 kg으로 크게 높았다(P<0.05). 그리고 마지막 비육후기의 경우는 평균 0.96∼1.04 kg으로서 전체 처리구간에 통계적인 유의차가 없었다(P>0.05).Table 8 shows the total CP intake and intake per serving per day. 한편 비육단계별에 따른 조단백질(CP)섭취율은 보면 섭취량에 영향을 받아 유사한 경향을 나타내었다. 다시말해서 비육전기때는 TMF사료를 섭취하는 C2구, T2, 3구의 경우에 15.50%, 15.50% 및 15.96%로 높게 나타났으나 C1구, T1구는 11.42∼11.39%로서 매우 낮게 나타났다(P<0.05). 또한 비육중기에도 전기때와 유사한 경향이었으나, 비육후기에는 다시 농후사료를 섭취하는 T2구를 비롯하여 계속적으로 농후사료를 섭취해온 C1구와 T1구가 각각 10.60%, 10.46% 및 10.59%로 다른 처리구보다 더 높게 나타나 통계적인 유의차가 인정되었다(P<0.05).

표 9는 1일 두당 섭취한 총 가소화영양소총량(TDN)섭취량과 섭취율을 나타낸 것으로서, 비육전기때 평균 TDN섭취량은 4.31~7.90 kg으로서 전체 처리구에 중에서는 T3구가 7.90 kg으로 가장 높았던 반면에 T1구는 4.31 kg으로 가장 낮게 나타나 통계적인 유의차가 나타났다(P<0.05). 또한 비육중기에는 평균 6.22~9.76 kg 범위로서 C2구와 T3구가 9.79 kg와 9.75 kg으로 크게 높았다(P<0.05). 그리고 마지막 비육후기의 경우는 평균 6.28~9.28 kg으로서 전체 처리구간에서는 C2구와 T3구가 가장 높게 나타나 통계적인 유의차가 나타났다(P<0.05).  Table 9 shows the total intake (TDN) intake and intake rate of TDN per day. 3. 혈액의 성상 변화3. Changes in blood properties

표 10에서 볼 수 있듯이, 비육전기 전기간 동안의 혈청 중의 총 콜레스테롤은 평균 178.68 mg/dL이었고, 전체 처리구중에서는 C1구가 204.80 mg/dL로 가장 높았다(P<0.05). 또한 총 글리세라이드는 평균 14.05 mg/dL이었고, 전체 처리구중에서는 T3구가 19.50 mg/dL로 가장 높았다(P<0.05). 그러나 GOT는 평균 64.54 mg/dL으로 처리구간에 거의 차이가 없었다. 그러나 GPT는 평균 25.33 mg/dL였고, 글루코오스는 평균 69.88 mg/dL으로 대체로 처리구가 대조구보다 크게 높았다(P<0.05). 그러나 알부민은 3.63 mg/dL으로 거의 차이가 없었다. 이는 거세한우의 혈중 글루코오스 농도에는 영향을 미치지는 못하는 것으로 판단된다. 또한 BUN은 개시기에 평균 12.69 mg/dL 로서 비육개시 이후에 점치 낮아지는 경향을 보였다.  This suggests that it does not affect the blood glucose level of Hanwoo steers. 끝으로 혈청내의 면역성을 조사하기 위하여 IgM는 평균 3.68 ng/ml으로 전체 처리구 중에서는 처리구(3.82~3.85 ng/ml)가 대조구(3.39~3.48 ng/ml)보다 더 높게 나타나 통계적인 유의차가 나타났다(P<0.05). 또한 IgG의 경우는 평균 211.44 ng/ml으로 전체 처리구 중에서는 처리구(242.50~263.90 ng/ml)가 대조구(147.50~151.90 ng/ml)보다 더 높게 나타나 통계적인 유의차를 나타내어(P<0.05) 한방생균제의 첨가로 면역성이 크게 높아졌다.  Finally, IgM was 3.68 ng / ml, which was higher than that of control (3.39 ~ 3.48 ng / ml) in the treatment group (3.82 ~ 3.85 ng / ml) P < 0.05). 표 11은 비육 중기(20~23개월령)의 혈청중의 이화학적 성상을 조사한 것이다. 혈청 중의 total cholesterol은 평균 192.26 mg/dL이였으며, 전처리구 중에서 T3구가 214.50 mg/dL으로 가장 높았던 반면 T1구는 166.70 mg/dL 크게 낮게 나타나 통계적인 유의차가 있었다(P<0.05). 또한 트리글리세라이드는 평균 12.96 mg/dL으로서 각 처리구에는 T2구가 16.90 mg/dL으로 가장 높았던 반면에 C2구는 8.90 mg/dL으로 가장 낮게 나타나 유의차가 인정되었다(P<0.05). 그리고 GOT는 평균 69.82 mg/dL로서 그 중에서 C2구가 81.60 mg/dL으로 크게 높았다(P<0.05). 그리고 GPT의 경우는 평균 23.86 mg/dL였으며 T3구가 29.50 mg/dL으로 다른 처리구 보다 크게 높게 나타나 통계적인 유의차가 있었다(P<0.05). 이외에도 BUN은 평균 11.20 mg/dL, albumin은 평균 3.79 mg/dL으로 나타났으며, C2구가 67.80 mg/dL으로 가장 낮아 통계적인 유의차가 인정되었다(P<0.05). 그러나 글루코오스는 평균 73.40 mg/dL 이었다.In addition, triglycerides averaged 12.96 mg / dL, the highest in the T2 group at 16.90 mg / dL, and the lowest in the C2 group at 8.90 mg / dL (P <0.05). 한편 혈청내의 면역성을 조사하기 위하여 IgM와 IgG을 분석한 결과, 종료시에 각각 평균 2.95 ng/mL과 171.96 ng/mL으로 대체로 처리구(3.05~3.12 ng/mL, 200.30~208.70 ng/mL)가 대조구(2.59~2.89 ng/mL, 120.50~204.30 ng/mL)보다 더 높게 나타났으나 상기의 비육전기때 보다는 다소 낮아진 경향을 보였다. 표 12는 비육후기 전기간(24~30개월령) 동안의 혈청변화를 나타낸 것이다. 총 콜레스테롤은 비육후기 동안에는 평균 178.05 mg/dL이였고, 그 중에서 T3구가 195.55 mg/dL로 가장 높았으나 T1구는 150.35 mg/dL로 가장 낮게 나타났다(P<0.05). 또한 triglyceride는 평균 8.81 mg/dL로서 T3구가 가장 높았다(P<0.05). 간 기능을 나타내는 GOT는 평균 56.23 mg/dL이었고, GPT의 경우는 평균 20.61 mg/dL으로 T3구와 C2구 각각 24.10 mg/dL과 25.15 mg/dL으로 다른 처리구보다 더 높은 경향을 나타내었다.Table 12 shows the serum changes during the post-finishing period (24 to 30 months). 글루코오스의 경우는 평균 66.08 mg/dL으로 C1구와 T2구가 더 높았고(P<0.05), BUN은 평균 13.08 mg/dL으로 비육후기 초기에 증가하였다가 후반기에는 다소 낮아지는 경향을 보였다. 그리고 알부민은 3.56 mg/dL로 처리구간에 거의 차이가 없었다. 한편 혈청내의 면역성을 조사하기 위하여 IgM는 평균 2.49 ng/ml이었고, IgG는 126.54 ng/mL으로 비육전기, 비육중기를 거쳐 비육후기로 진행되면서 점차 낮아지는 경향이었으나 유의차는 없었지만 IgG의 경우는 처리구가 대조구보다 더 높게 나타나 통계적인 유의차가 있었다(P<0.05).  In the case of glucose, the average of 66.08 mg / dL was higher in the C1 group and T2 group (P <0.05), and the BUN was 13.08 mg / dL in the early part of the fattening period. 4. 도체등급 및 육의 이화학적 특성4. Conductor grade and physicochemical properties of meat

표 16은 시험종료 후에 도축된 도체등급 판정결과이다. 도체중은 431.00∼464.00 kg 범위로서 평균 447.30 kg으로 처리구간에 통계적인 유의차는 없었고(P>0.05), 등지방 두께는 평균 10.78∼14.11 mm 정도로서 그 중 T1구가 14.11 mm로 다른 처리구보다 다소 두꺼웠으나 통계적인 유의차는 없었다(P>0.05). 여기서 T1구가 다른 처리구보다 더 두꺼워진 것은 비육전기때 낮은 증체에 따라 비육후기때 크게 성장한 보상성장의 결과로 추측된다. 그러나 배최장근 단면적의 경우는 평균 84.10∼85.89 ㎠ 로서 처리구간에 통계적인 유의차는 없었다(P>0.05). 도체등급에서 육량등급의 경우, A등급 : 3점, B등급 : 2점, C등급 : 1점으로 환산하여 처리구간을 비교해보았을 때 T1구는 1.89점, T2구가 2.00점, T3구 1.89점 C1구 2.00점 및 C2구 1.70점으로서 처리구간의 비교에서 통계적인 유의차는 없었다(P>0.05). 그러나 마블링스코어의 경우는 C2구와 T3구가 6.05으로 다른 처리구보다 크게 높은 경향을 나타냈으나 통계적인 유의차는 없었다(P>0.05). 한편 도체등급 중의 육질등급을 1++등급 : 4점, 1+등급 : 3점, 1등급 : 3점, 2등급 : 1점으로 환산한 후 처리구간별 비교시에 T3구가 3.76점으로 크게 높았던 반면, 대조구는 3.20∼3.22점으로 크게 낮게 나타났으나 통계적인 유의차는 없었다(P>0.05). 본 시험 결과, 본 발명의 한방생균제가 일부 첨가된 처리 2, 3구가 다른 처리구보다 도체중, 배최장근 단면적, 육량과 육질등급이 개선되었으므로, 비육한우에게 본 발명의 한방생균제를 혼합급여하면 도체등급에 더 유리한 영향을 미칠 것으로 사료된다.

표 17은 등심부위를 채취하여 이화학적 특성을 분석한 결과이다. 수분은 60.40~63.70% 정도였고, 조단백질 함량은 19.03∼20.51%, 조지방의 경우는 14.08~17.89% 범위로서 T2구가 높았지만 통계적인 유의차는 없었다(P>0.05). 또한 육색에서 명도를 나타내는 L*값은 37.99∼41.55 범위로서 그 중 T2구가 밝게 나타났고(P>0.05), 적색도를 나타내는 a*값은 22.12∼23.43 범위, 황색도를 나타내는 b*값은 9.93∼11.09 범위로서 처리구간에 거의 차이가 없었다. 그리고 pH는 5.49∼5.53 범위였고, 가열감량은 20.84∼25.22%로서 처리구간에 통계적인 유의차가 있었고(P<0.05), 전단력은 3.57∼3.84 kg/㎠ 범위로서 처리구간에 유의차는 없었다(P>0.05). 그리고 육의 콜레스테롤 함량은 41.64∼47.33 mg/100g으로 나타났으며, 전처리구간의 비교에서는 C1구와 T2구가 47.10∼47.33 mg/100g으로 가장 높았던 반면에 C2구와 T1구가 41.64 mg/100g로서 크게 낮게 나타나 통계적인 유의차가 있었다(P<0.05).Table 17 shows the result of analyzing physicochemical characteristics of the sirloin region. 표 18은 등심부위의 지방산을 분석한 결과로서 올레익 에시드는 전체 조성분에서 48.42∼52.95%로서 T3구가 높게 나타났으나 통계적인 유의차는 없었고(P>0.05), 그 다음으로 팔미트산 26.41∼28.86%, 스테아릭 애시드10.12∼14.10%, 팔미토레익 애시드 2.96∼4.82%, 미리스틱 애시드 2.57∼4.06%의 순으로 많이 함유되어 있었다. 전체 포화지방산(Saturated Fatty Acid, SFA)은 39.92∼43.81% 범위로서 대조구가 다른 처리구보다 높아 통계적인 유의차는 없었고(P>0.05), 불포화지방산(Unsaturated Fatty Acid, UFA)은 56.20∼60.08% 범위로 나타났다. 그리고 PUFA/SFA 비율은 0.049~0.064%이며, MUFA/SFA비율은 1.035∼1.424%로서 처리구간에 차이가 없었다. 그러나 MUFA (Monosaturated Fatty Acid)는 53.62~58.04% 범위로서 그 중 T3구가 높았으나 유의차는 없었다(P>0.05). 하지만 PUFA (Polysaturated Fatty Acid)는 2.09∼2.67% 정도 처리구간에 유의차는 없었다.

표 19는 등심육의 아미노산 조성을 나타낸 것으로서 처리구간에 유의적인 차이가 나타나지는 않았지만 glutamatic acid는 2.17∼2.50 %의 범위로 가장 많은 비율을 차지하였으며, asparitic acid는 1.35∼1.57 %의 범위에 있었고, lysine은 1.06∼1.21%이였고, Leucine은 1.10∼1.30 %의 정도로 나타났다. 전반적으로 모든 처리구간의 비교에서는 통계적인 유의차가 나타나지 않았다(P>0.05). 이외 성분은 1%이하로서 미량으로 함유하고 있었다.

표 20은 한우 도축시에 부분육으로 생산된 고기량을 나타낸 것이다. 도축 후 머리, 다리, 내장을 제외하고 남은 뼈를 포함한 지육량은 C1구, C2구, T1구, T2구, T3구가 각각 343.47 kg, 332.41 kg, 348.65 kg, 369.98 kg, 그리고 349.60 kg으로 나타나 전체 처리구중에서 T2구가 369.98 kg으로 가장 높았던 반면에 C2구가 332.41 kg으로 가장 낮았으나 통계적인 유의차는 없었다(P>0.05). 또한 총 도체의 부위별 구성비율에서 갈비부위가 57.84∼64.37 kg(총 지육대비 17.40%)으로 전체 지육량 중에서 가장 높은 비율을 차지하였고, 채끝은 51.36∼57.17kg(15.45%) 이었으며, 양지는 43.51∼48.43 kg(13.09%), 등심은 42.26∼47.04 kg(12.71%), 설도는 40.09∼44.62 kg(12.06%), 앞다리는 29.33∼32.54 kg(8.80%), 우둔부위는 25.26∼28.12kg(7.60%), 사태는 18.54∼20.64 kg(5.58%), 목심은 16.66∼18.55 kg(5.01%), 안심은 7.64∼8.51 kg(2.30%) 순으로 낮아졌다. 또한 전체 처리구간의 비교에서 대체로 T2구가 다른 처리구에 비하여 가장 높은 비율을 나타내었다. 이외에 부산물은 사골은 24.22∼26.96 kg(7.29%), 꼬리 17.54∼19.52 kg(5.28%), 잡뼈(20.88∼23.24 kg)(6.28%)를 정도를 나타내었다.Table 20 shows the high yields produced in the minced meat during slaughtering.
