- 제1항에 있어서, 길이 대 폭 치수의 비율이 2.3 내지 3.7 범위인 것을 특징으로 하는 말티톨 결정.

- 제10항에 있어서,a) 건조 물질 함량이 60 중량% 이상이고 말티톨 함량이 85 중량% 이상인 제1 말티톨 시럽을 제조하고;b) 상기 말티톨 시럽에 수크로스, 프룩토스, 전화당 및 글루코스 시럽으로 이루어진 군 중에서 선택되는 당을 단독으로 또는 혼합물로서 도입하고;c) 알데히드 및 응축 디카르보닐 화합물로 이루어진 불순물을 생성하기 위해 상기 제1 말티톨 시럽을 가열하고;d) 건조 물질 함량이 65 중량% 이상이고 말티톨 함량이 90 중량% 이상인 제2 말티톨 시럽을 제조하고;e) 건조 물질 함량이 70 중량% 이상이고 말티톨 함량이 80 중량% 이상인 말티톨 시럽을 얻기 위해 상기 제2 말티톨 시럽을 제1 말티톨 시럽에 혼입하고;f) 얻어진 말티톨 시럽을 건조 물질 함량 80% 이상으로 농축시키고;g) 농축된 말티톨 시럽을 증발 및/또는 냉각시켜 결정화시키고;h) 얻어진 결정을 회수하는 것을 포함하는 것을 특징으로 하는 방법.
