Claims (5)
- 원유, 생크림, 물엿 및 정제수를 혼합하고 교반시키며 백설탕, 탈지분유, 안정제, 유화제 및 정제수를 더 첨가하고 혼합한 후, 여과, 균질화 및 살균시켜 제조된 아이스크림 믹스를 제조하고, 1차 냉각하는 단계;상기 냉각된 아이스크림 믹스에, 아이스크림 믹스 100중량부 대비, 락타아제 0.00025~0.00050중량부를 투입하고 교반시키며 6~8시간 효소반응 시켜 유당을 분해하는 단계;상기 유당이 분해된 아이스크림 믹스를 2차 냉각하고, 4~8시간 숙성시킨 후, 동결시키는 것을 특징으로 하는 유당분해 아이스크림의 제조방법.
