Claims (3)
- 물김치 제조방법에 있어서,분자량이 1000-45000 범위의 키토산을 사용한 키토산-아스코베이트를 물김치 총중량에 대하여 0.05-1중량% 첨가하는 것을 특징으로 하는 키토산-아스코베이트 첨가 물김치 제조방법.
- 제 1항에 있어서, 상기한 키토산-아스코베이트는 키토산 1g을 볼텍스(vortex) 상에서 0.05-1%의 아스코르빈산(ascorbic acid)용액 0.5-2L에 가하여 실온에서 30분-1시간 30분동안 반응하여 조제하는 것을 특징으로 하는 키토산-아스코베이트 첨가 물김치 제조방법.
