Abstract

PURPOSE:To convert cooked rice grains containing ingredients into simple grains without damaging the ingredients, by applying compressing and shearing force to the cooked rice grains with a roller in cooling the cooked rice grains to about 0 deg.C, subsequently applying compressing and shearing force thereto in freezing the rice grains. CONSTITUTION:Cooked rice grains are fed in the form of a layer onto conveyors 6 and 7, cooled and frozen so as to provide +30--30 deg.C cooked rice temperature while being allowed to cool, cooled and frozen. In the process, compressing and shearing force is applied to the cooked rice grains at a temperature within the range of +30-0 deg.C with a roller 13. In the following freezing step, rollers, 14-16 for applying compressing and shearing force and fixed members 18 and 19 are oppositely positioned and gaps are provided between the rollers and the fixed members for applying the given compressing force. Plural protrusions 20 are provided on the rollers for forcibly feeding the cooked rice grains to the gaps. When the temperature of the cooked rice grains is 0--30 deg.C, compressing and shearing force is reapplied with the rollers, etc., to freeze and convert the cooked rice grains into simple grains. As a result, ingredients of the cooked rice grains containing the ingredients are not damaged.
