Abstract

PURPOSE: To obtain a protein raw material usable as various foods from bone- containing fish and shellfishes, by roughly crushing gutted fish and shellfishes, fermenting the meat with an enzyme and/or microorganism, inactivating the enzyme and/or microorganism and finely pulverizing the product.
CONSTITUTION: Guts and optionally head and/or skin are removed from fish and shellfishes and the obtained fish and shellfish meat is roughly crushed. The roughly crushed meat of fish and shellfishes is subjected to (1) fermentation with an enzyme and/or microorganism, inactivation of the enzyme and/or microorganism and fine pulverization or (2) fine pulverization, fermentation of the powder with an enzyme and/or microorganism and inactivation of the enzyme and/or microorganism or (3) fermentation with an enzyme and/or microorganism under fine pulverization and inactivation of the enzyme and/or microorganism.
