Abstract
PURPOSE:To obtain the titled fat and oil capable of homogeneously dispersing a fat and oil in a dough and providing a cake dough having high cellular property and dough stability, by emulsifying an edible fat and oil into an oil-in-water type emulsion with polyglycerol ester of a fatty acid, lecithin and thickener. CONSTITUTION:The aimed oil-in-water type fat and oil obtained by blending 100pts.wt. total amount of 30-70wt.% edible fat and oil and 70-30wt.% aqueous phase part with 0.2-2wt.% polyglycerol ester of a fatty acid, 0.1-2wt.% lecithin and 0.1-2wt.% thickener (preferably carrageenan, furcellaran, locust bean gum, guar gum, gum arabic, karaya gum, pectin, xanthan gum, etc.).
