Abstract

PURPOSE:To obtain a gelatinous oil-in-water type emulsified composition having excellent stability and improved stability in freezing and thawing without causing separation and emulsion fracture in normal temperature storage and normal temperature distribution, by blending a gelatinous oil-in-water type emulsified composition with a small amount of a gelatinizing agent. CONSTITUTION:A water phase and an oil phase blended with a gelatinizing agent are emulsified by a conventional procedure to give a gelatinous oil-in- water type emulsified composition containing 8-50wt.%, preferably about 15-45wt.% fats and oils, 5-35wt.% saccharide as main components, 0.2-2wt.%, preferably about 0.3-1.5wt.% one or more gelatinizing agents selected from carrageenan gum, xanthan gum, locust bean gum, low methoxylpectin and high methoxylpectin and 0.2-4wt.%, preferably about 0.5-2.5wt.% emulsifying agent.
