There are various types of devices for baking bulk solid foods, and some of these devices utilize heat-resistant particles in a container as a heat medium. That is, heat-resistant particles are placed in a container and heated from outside the container. The target food is placed in this mixture and the food is baked while stirring using the particles as a heating medium. The particles are stirred manually or mechanically to ensure uniform baking around the food.

である。 However, it is not always sufficient to avoid uneven cooking due to uneven heat transfer, undercooking, and carbonization due to overheating, and it is extremely difficult to grill flat foods such as starch. Furthermore, it takes time to transfer heat, and has the disadvantage that sufficient temperature control, automation based on this control, and energy saving are difficult. In particular, the flavor changes delicately depending on how heat is applied, and it is difficult to maintain a constant flavor with good reproducibility.

The inside of the container on the plate is filled with heat-resistant particles to form a particle layer, a heater for heating the heat-resistant particles is provided inside or outside the container, and a blower from an air blower is provided at the bottom of the container. It is configured by connecting a blower pipe for supplying air, and with this structure, air is blown into the heated particle layer through an air diffuser plate and placed in the particle layer while being stirred. It is designed to heat solid food.

度で食品を加熱することができる。 The diffuser plate has a large number of holes that do not allow particles to pass through, but allows gas to pass through, and is made of a perforated plate, a porous sintered metal plate, a wire mesh, or the like. The particles must be moved around and agitated by a predetermined amount of air flow, and conditions must be appropriately selected to prevent them from flying out of the container. These conditions are determined from the amount of air blown, specific gravity, shape, and outer surface area of the particles. The solid food may be placed directly embedded in the particle layer or placed in a basket. Baskets are used when the food is light, or when the food itself is small, such as almonds. The temperature of the particle layer is stable due to stirring and mixing by gas. For example, at 300℃, it is ±3℃, so
Temperature control is easy, so food can be heated at a controlled, predetermined temperature.

An air diffuser plate 4 is provided inside the container 9 at a distance from the bottom 9a. The air diffuser plate 4 contains particles 8, which will be described later.
A large number of holes 4a are bored through which the air from the blower 1 is allowed to pass through, but not through.

As the heater 5, it goes without saying that a known device such as an electric heater or a heat pipe can be used. Further, although in the embodiments it is provided inside the container, it can also be provided outside the container and heat the particles through the container. The heater 5 measures the temperature inside the container with a thermometer 6 placed inside the container, and is controlled to a predetermined temperature in conjunction with a temperature controller 7 that can set a temperature suitable for heating solid food in advance. It is set in.

It is desirable to use spheres or lumps made of silica, alumina, glass, etc., which are millimeter in size, heat resistant, difficult to shatter even after long-term use, and can be used with a relatively small amount of air flow.

While stirring the particle layer in the container 9, the particle layer 8 is heated by the heater 5. If air is not blown or stirred, local overheating will occur and must be avoided. Once the predetermined temperature has been reached, the solid food is held in a suitable state or placed in the basket 10 and submerged in the particle bed 8. It sinks easily, as if submerged in liquid, but if it is too light to sink naturally, it can be easily buried by placing it in a basket or attaching a weight to it. The baking temperature and time should be determined in advance, taking into consideration the flavor. Once the food is baked, it is removed from the container 9 and the particles are shaken off.
