Description
本発明は、栄養食に関するもので、その目的と
するところは、病人あるいは老人に対して与えら
れる高カロリー栄養食であつて、水に対する溶
解・分散性および流動性が著しく優れた栄養食を
提供するにある。
近年、病院の医療行為における経口・経管流動
食の重要性はますます高まつており、その需要も
著しく増加している。かかる流動食には粉末状お
よび液状があるが、粒状の栄養食は少ない。ま
た、従来の粉末状栄養食は、使用時に水に対する
溶解性、分散性等が極めて悪く、高速撹拌機にて
均一化する手段が必要であり、起泡が生じ、損失
も大きく、作業性に著しい難点があつた。
本発明の栄養食は、主成分がデキストリン、カ
ゼイン、脱脂粉乳および植物油からなり、栄養素
の不活化しない温度条件で造粒し、粒子径が0.1
〜1.0mmで、粒子のかさ比重が0.4〜.6g/mlで
あることを特徴とするものであつて、水に対する
溶解性、分散性ならびに水ぬれ性が極めて良好な
ものである。さらに本発明の栄養食には卵黄を含
まない故、嗜好上くせがなく、連用性がある点で
も特色を有するものである。
本発明をより詳しく説明すると、栄養食の製造
に使用される成分のうち、デキストリンはできう
る限りマルトースの混入量の少ないものが使用さ
れ、カゼインは大豆カゼインを除くカゼインまた
はカゼインソーダおよび脱脂粉乳が使用される。
脂質としては植物油が適当である。その他の成分
として塩化ナトリウム、塩化カリウム、硫酸マグ
ネシウム、燐酸塩等の電解質、ならびにビタミン
B1、ビタミンC、ビタミンE、ニコチン酸アミ
ド等のビタミン類が必要量配合される。
上記の如き栄養組成を有する混合物を造粒する
方法として、好適には温度80℃以下の温風にて、
流動層状態に保持した原料混合物に、デキストリ
ンまたはその他の適当な結合剤を含む温水溶液あ
るいは単なる温水を噴霧しつつ乾燥造粒して製造
される。この場合、回分式か連続式いずれの方法
にても製造することができるが、重要な点は、造
粒した栄養食剤型として、第1に0.1mmないし1.0
mmの粒子径であること、第2に0.4g/mlないし
0.6g/mlのかさ比重を有することである。
上記の特徴をもつ本発明の栄養食は、下表に示
す溶解速度のテストから明らかなように、市販の
他社品と比較して、水に対して優れた溶解性を示
すことから、実際に流動食として使用するにあた
り、特別な撹拌機を使用する必要もなく極めて容
易に水に均一化することが可能で、また、衛生面
での利点もあげることができる。

はほとんどなかつた。
以下に、本発明の製造例を挙げて説明する。
製造例
デキストリン626g、ミルクカゼイン134g、脱
脂粉乳91g、植物油90g、ミネラル類としてナト
リウム2.9g、カリウム3.5g、カルシウム1.4g、
マグネシウム0.22g、鉄23mg、燐2.3g、塩素4.8
g、ビタミン類としてビタミンB1塩酸塩3mg、
ビタミンC280mg、ビタミンE90mg、ニコチン酸ア
ミド40mgを配合した原料を造粒装置に仕込み、底
部より風温80℃以下にて流動層状態に保持し、原
料デキストリンを30%含む温水溶液を配合原料6
容に対して1容の割合で噴霧しつつ造粒・乾燥を
行なつた。
得られた栄養食は測定の結果、粒径が0.1mmか
ら1.0mmの範囲にあり、特に0.2mmないし0.4mmが多
かつた。また、かさ比重は0.56g/mlであつた。
この製品の水に対する溶解速度(50gを温湯80ml
に加え撹拌・溶解に要する時間)は2分以内であ
つた。さらに、流動性(内径2mm、長さ120cmの

間あたりの流下量)は60ml/分であり、良好な流
