The present invention relates to a nutritional food, and its purpose is to provide a high-calorie nutritional food given to sick or elderly patients, which has extremely excellent solubility and dispersibility in water and fluidity. There is something to do. In recent years, the importance of oral and tube-based liquid diets in hospital medical practice has been increasing, and the demand for them has also increased significantly. Such liquid foods come in powdered and liquid forms, but granular nutritional foods are rare. In addition, conventional powdered nutritional foods have extremely poor solubility and dispersibility in water during use, requiring a high-speed stirrer to homogenize them, resulting in foaming, large losses, and poor workability. There were significant difficulties. The nutritional food of the present invention consists of dextrin, casein, skim milk powder, and vegetable oil as main components, is granulated under temperature conditions that do not inactivate nutrients, and has a particle size of 0.1
~1.0mm, the bulk specific gravity of the particles is ~0.4. 6 g/ml, and has extremely good solubility, dispersibility, and water wettability in water. Furthermore, since the nutritional food of the present invention does not contain egg yolk, it is characterized by its ease of taste and long-term use. To explain the present invention in more detail, among the ingredients used in the production of nutritional foods, dextrin is used with as little maltose as possible, and casein is casein other than soybean casein or casein soda and skim milk powder. used.
Vegetable oil is suitable as the lipid. Other ingredients include electrolytes such as sodium chloride, potassium chloride, magnesium sulfate, phosphates, and vitamins.
Vitamins such as B 1 , vitamin C, vitamin E, and nicotinic acid amide are blended in necessary amounts. As a method for granulating a mixture having the nutritional composition as described above, preferably using hot air at a temperature of 80°C or less,
It is produced by drying and granulating a raw material mixture maintained in a fluidized bed state while spraying a hot aqueous solution containing dextrin or other suitable binder, or simply hot water. In this case, it can be manufactured using either a batch method or a continuous method, but the important point is that as a granulated nutritional food type, firstly 0.1 mm to 1.0 mm.
The particle size must be 0.4 g/ml or more.
It has a bulk specific gravity of 0.6 g/ml. As is clear from the dissolution rate test shown in the table below, the nutritional food of the present invention having the above characteristics shows superior solubility in water compared to commercially available products from other companies. When used as a liquid food, it can be homogenized into water very easily without the need for a special stirrer, and it also has hygienic advantages.

[Table] Furthermore, as is clear from the results of the fluidity test shown in the drawing, the nutritional food of the present invention exhibits better fluidity than other companies' products on the market, making it ideal as an oral or tube-transferring liquid food. It can be said to be a nutritious food. In this flow test, a poly tube with an inner diameter of 2 mm and a length of 120 cm was used to measure the change in flow rate (ml/mm) at a head of 0.7 m at a temperature of 40°C. 2 is another company's product R, and 3 is another company's product M. Note that there was almost no temperature change during the measurement time. Production examples of the present invention will be described below. Production example: dextrin 626g, milk casein 134g, skim milk powder 91g, vegetable oil 90g, minerals such as sodium 2.9g, potassium 3.5g, calcium 1.4g,
Magnesium 0.22g, iron 23mg, phosphorus 2.3g, chlorine 4.8
g, vitamin B 1 hydrochloride 3mg as vitamins,
A raw material containing 280 mg of vitamin C, 90 mg of vitamin E, and 40 mg of nicotinic acid amide is charged into a granulator, maintained in a fluidized bed state with an air temperature of 80°C or less from the bottom, and a hot aqueous solution containing 30% of raw material dextrin is added to raw material 6.
Granulation and drying were carried out while spraying at a ratio of 1 volume to 1 volume. As a result of measurement, the obtained nutritious food had a particle size in the range of 0.1 mm to 1.0 mm, with 0.2 mm to 0.4 mm being particularly common. Moreover, the bulk specific gravity was 0.56 g/ml.
Dissolution rate of this product in water (50g in 80ml of warm water)
(time required for stirring and dissolution) was within 2 minutes. Further, the fluidity (flow rate per unit time at a head of 0.7 m using a polytube with an inner diameter of 2 mm and a length of 120 cm) was 60 ml/min, indicating good fluidity.
