良好な弾性が得られる加工卵製品の製造方法を特
公昭56−49103号公報に提案している。

気が入りながら加熱することにある。

気孔を散在した金属製型枠に表面側に被膜層を形
成した卵取り出し用金属板を少なくとも底部に重
ね合せ、型枠に粒状の茹卵を充填しかつフイルム
材により被覆した後蒸熱し、前記型枠内に通気孔
から蒸気が入りながら加熱するから、蒸気熱が適
量に入り茹卵の芯部まで十分にゆきとどき均一な
加熱が可能になり、また製品には適度な水分を与
えながら加熱できて黄ばみ、黒みがなく弾性も良
