Abstract

PURPOSE:To obtain continuously a hollow baked cake in which a granule is correctly put in the central position, by evacuating and sucking a lower sheet dough at a position to place a granule to change it into a dent part and feeding the granule to the dent part. CONSTITUTION:The sheet dough 2 is placed on the slat plate 3, suction force is made to act on the dough from the reduced pressure chamber 7 through the through opening 4 of the slat plate to form the dent part 10. The granule 12 is fed from the granular solid ingredient feeder 1 to the dent part 10, the sheet dough 14 is piled and placed on the sheet dough, the device 15 for contact bonding and cutting is lowered, the peripheral part of the sheet dough is bonded under pressure and the granule-containing sheets are cut and molded.

Conventionally, hollow baked confectionery, in which particulate matter is housed in a cavity formed by two upper and lower sheets of dough, has been developed due to the novelty of the presence of particulate matter in the cavity and the fact that the two upper and lower sheets of roasted dough and the particulate matter are The resulting complexity of flavor, as well as the mobility of the particulates within the cavity, was highly appealing to consumers.

This hollow baked confectionery containing granules is made by rolling and forming two pieces of highly sticky dough such as biscuits, snacks, and rice crackers, and arranging granules such as nuts and candy fruits on the lower sheet-like dough. It is manufactured by placing another sheet-like material on top of it, pressing the peripheral edge thereof, cutting it into an appropriate shape, and then baking it in an oven.

However, in the conventional manufacturing method, when a large number of granules are arranged on a sheet-like fabric below, if the granules have a shape close to a spherical shape such as nuts, they are transferred on the fabric and separated into upper parts. In many cases, the sheet-like fabric would be deviated from the specified position by the time the sheet-like fabric was placed. It is obvious that particles displaced from a predetermined position will be crushed by the press or cut by the cutting blade in the subsequent peripheral edge press, cutting and forming process, resulting in inconvenience.

それ故、粒状物を所定の位置に正しく配置する方法が考

Therefore, unless a method is devised to correctly arrange the granules at predetermined positions, it is impossible to efficiently produce large quantities of the desired hollow baked confectionery.

As a result of intensive studies to solve the above-mentioned problems, the present inventors created a recess by vacuum suctioning the position where the granular material should be placed in the lower sheet-like fabric, and deposited the granular material in the formed recess. We discovered that by supplying scales, it is possible to continuously mass-produce hollow baked confectionery in which the particulate matter is correctly housed in the center.
Based on this knowledge, we have completed the present invention.

That is, the present invention firstly conveys sheet-like dough such as rice crackers and snacks using a slat conveyor consisting of a slat plate with a large number of through openings, and the upper edge slides onto the lower surface of the slat plate. The material reaches a vacuum chamber installed below the slat conveyor so as to be in contact with the slat conveyor, and by reducing the pressure in the vacuum chamber, the sheet-like fabric is pulled to form a large number of depressions, and while maintaining the reduced pressure state, the depressions in the sheet-like fabric are The present invention relates to a method for manufacturing hollow baked confectionery containing granules, which is characterized in that after supplying granules, another sheet-like dough is placed on top of the sheet-like dough, and then cut and formed while pressing the peripheral edge of the dough. 2
A slat conveyor consisting of a large number of slat plates provided with a large number of through openings at regular intervals in the transfer direction and the transverse direction is arranged in an endless ring shape or in an intermittent movable manner, and the upper edge of the slat conveyor is arranged below the slat conveyor. A decompression chamber is installed so that the part slides on the lower surface of the slat plate, and a first pair of rolling rolls, a granular material supply device, and a second one The present invention relates to an apparatus for manufacturing hollow baked confectionery containing granules, characterized in that a pair of rolling rolls and a sheet-like dough pressure-bonding-cutting-forming device are sequentially arranged.

In the slat conveyor, as shown in FIG. 2, a large number of slat plates 3 are fixed to a traveling chain 5 at a fixed part 6, and are arranged in an endless ring shape or in an intermittent movable manner. The slat plate 3 is provided with a through opening 4 at a predetermined position.
When the slat plate 3 on which the sheet-like fabric 2 is placed is transferred to the upper part of the decompression chamber 7 by the slat conveyor, the suction fan 8 is operated to create a depressurized state. When the pressure inside the decompression chamber is reduced, the sheet-like fabric on the slat plate is pushed by atmospheric pressure, and since the fabric has appropriate extensibility, a concave portion lO is formed at the through opening 4 of the slat plate. be done. The depth of this concave portion varies depending on factors such as the degree of pressure reduction, the diameter of the through hole, the properties and thickness of the sheet-like fabric. Since the concave portion 10 is intended to improve the fixing arrangement of particulate matter,
For example, if the diameter of the through opening 4 is 15 mm, the depth must be 2.5 mm or more, and if the depth of the recess becomes excessive due to excessive decompression, problems such as tearing of the fabric will occur. The upper limit is about 9 layers. The optimum depth of the recess is determined by the conditions for stably fixing the particulate matter (:3+n) and the degree of vacuum 12■■Hg that can be reached with a simple decompression device (in this case, the depth is 61■). .

When the thickness of the fabric is within the usual range of 0.5 to 1.5 mm, there is almost no effect of the thickness of the fabric on the depth of the recess, and when the through opening diameter is 15 mm, the normal vacuum level is 5 to 1.5 mm. 18

Next, the crimping/cutting device 15 is lowered to press the peripheral edge of the sheet-like fabric into an appropriate shape, and cut and shape it. The molded product is transferred to an oven using a conveyor such as a steel conveyor, and baked there to obtain the intended hollow baked confectionery containing granules.
